Abstract

ABSTRAK
Berdasarkan data Dinas Pariwisata Kota Padang jumlah pedagang yang berjualan makanan berjumlah 177. Sebanyak 55,8% tempat pengolahan makanan di Pantai Purus Padang belum memenuhi syarat tahun 2021 dan tahun 2022 terjadi kenaikan tidak memenuhi syarat sebesar 61,3%. Tujuan penelitian ini untuk mengetahui hubungan tingkat pengetahuan, sikap dan pengawasan makanan terhadap penerapan hygiene sanitasi makanan pada pedagang kaki lima di Pantai Purus Padang.
Metode penelitian yang digunakan kuantitatif dengan desain studi cross sectional. Penelitian dilakukan tanggal 10-28 Juni tahun 2023 di Pantai Purus Padang. Populasi penelitian ini yaitu semua pedagang kaki lima yang menjual makanan berjumlah 177 dimana pengambilan sampel menggunakan teknik simple random sampling dengan jumlah 53 orang. Data dikumpulkan menggunakan kuesioner dengan metode wawancara dan observasi. Analisis data secara univariat dan bivariat menggunakan uji Chi -square.
Hasil penelitian didapatkan dari 53 responden, sebanyak 69,8% pedagang memiliki penerapan hygiene sanitasi makanan yang tidak memenuhi syarat, sebanyak 64.2% pedagang kaki lima memiliki tingkat pengetahuan rendah, sebanyak 60.4% pedagang kaki lima memiliki sikap negatif dan sebanyak 86.8% pedagang kaki lima memiliki pengawasan makanan tidak baik. Berdasarkan hasil uji Chi-square, terdapat hubungan yang bermakna tingkat pengetahuan (p=0,000), sikap (p=0,000) dengan penerapan hygiene sanitasi makanan, dan terdapat hubungan yang tidak bermakna pengawasan makanan dengan penerapan hygiene sanitasi makanan (p=0,179).
Pengetahuan, sikap dan pengawasan makanan merupakan faktor yang berhubungan dengan penerapan hygiene sanitasi makanan. Diharapkan kepada Dinas Kesehatan untuk memberikan penyuluhan kepada pedagang kaki lima tentang bagaimana cara menerapkan hygiene sanitasi yang baik saat berjualan serta melakukan pengawasan makanan agar pedagang dapat menjaga kualitas makanan yang akan dijual.

ABSTRACT

Based on data from the Padang City Tourism Office, the number of traders selling food is 177. As many as 55.8% of food processing places at Purus Beach Padang did not meet the requirements in 2021 and in 2022 there was an unqualified increase of 61.3%. The purpose of this study was to determine the relationship between the level of knowledge, attitudes and food supervision on the application of food sanitation hygiene to street vendors at Purus Beach Padang.
The research method used was quantitative with a cross sectional study design. The research was conducted on June 10-28, 2023 at Purus Beach Padang. The population of this study were all street vendors who sold food totaling 177 where sampling used simple random sampling technique with a total of 53 people. Data were collected using a questionnaire with interview and observation methods. Data analysis was univariate and bivariate using Chi-square test.
The results showed that out of 53 respondents, 69.8% of street vendors had an unqualified food hygiene sanitation implementation, 64.2% of street vendors had a low level of knowledge, 60.4% of street vendors had a negative attitude and 86.8% of street vendors had poor food supervision. Based on the Chi-square test results, there is a significant relationship between knowledge level (p=0.000), attitude (p=0.000) with the application of food sanitation hygiene, and there is no significant relationship between food supervision and the application of food sanitation hygiene (p=0.179).
Knowledge, attitude and food supervision are factors associated with the application of food sanitation hygiene. It is expected for the Health Office to provide counseling to street vendors on how to apply good sanitation hygiene when selling and conduct food supervision so that traders can maintain the quality of food to be sold.
